The Ultimate Cheat with Coffee Brownies Recipe

Big on protein, low on sugar, and huge on flavor, these coffee brownies are a guilt-free indulgence that’s sure to satisfy your sweet tooth.

Ingredients

COFFEE BROWNIES

  • ¼ cup butter
  • 1 cup sugar-free chocolate chips
  • ¼ cup zero-calorie sweetener
  • 2 eggs, room temperature
  • ½ cup almond flour
  • ¼ cup coconut flour
  • ¼ cup unsweetened cocoa powder
  • ⅛ tsp salt
  • ¾ cup Quest Coffee Protein Shake

Method

  1. Preheat the oven to 350 F and prepare an 8×8 inch pan with non-stick spray and parchment paper.
  2. Add the butter to a microwave-safe bowl and melt for 1 minute until it is scalding hot.
  3. Stir in the chocolate chips and let sit for 5 minutes until smooth.
  4. Once cool, whisk in the sweetener and eggs.
  5. In another bowl, sift together the flours, cocoa powder, and salt.
  6. Add the wet ingredients to the dry mix, along with the Quest Coffee Protein Shake, and whisk until smooth.
  7. Pour the batter into the prepared pan and bake for 20-25 minutes.
  8. Allow the brownies to cool for 2 hours before cutting into 16 bars and serving.
