Indulge your sweet tooth with a twist on traditional desserts – Questified Lemon Blueberry Crisps. Dive into a delightful explosion of flavors with our Questified Lemon Blueberry Crisps! Imagine the juicy blueberries dancing with the tangy lemon, all enveloped in a golden, buttery crumble that delivers a satisfying crunch. To elevate this dessert to divine levels, crown it with a couple of Quest Lemon Cake Protein Bars and serve it warm with a dollop of ice cream on top for a truly heavenly experience.

Yields: 12 servings | Serving Size: 1/2 ramekin

Calories: 90 | Protein: 3g | Fat: 4g | Net Carb: 6g

Total Carb: 12g | Sugar: 5g

Ingredients

LEMON BLUEBERRY CRISP

  • Crisp:
  • 2 Lemon Cake Quest Bars
  • 2 tbsp zero calorie sweetener
  • Pinch salt
  • 3 tbsp butter, room temperature
  • Filling:
  • 4 cups blueberries, fresh
  • 1 tbsp lemon juice
  • 1 tbsp zero calorie sweetener
  • 1 tbsp cornstarch

Method

  1. Preheat the oven to 350 F and prepare a baking sheet with parchment paper.
  2. Break the Quest Bar into small pieces and place them on the baking sheet. Bake for 7-8 minutes or until golden. Let cool completely.
  3. Once cooled, place the bar pieces in a blender and blend until fine crumbles form. Transfer to a mixing bowl, add the zero calorie sweetener, salt, and combine. Then add the butter and mix using a fork. Set aside.
  4. In a separate bowl, mix the filling ingredients and divide the mixture into 6 ramekins. Top with the crisp mixture and bake for 15 minutes.
  5. Serve warm and optionally top with ice cream.
