If you don’t have Kodiak mix on hand, fret not! This recipe is versatile and can be made with regular pantry ingredients.

What sets these muffins apart is the minimal amount of sugar used. With only 1/4 cup of sugar, these muffins rely on the natural sweetness of bananas, resulting in a healthier treat.
Each muffin contains just 3 grams of added sugar, making them a guilt-free indulgence. Unlike traditional muffin recipes loaded with excess sugar, these muffins prove that you can enjoy sweetness without the extra calories.

Whole Grain Banana Muffins Recipe

Ingredients
2 large bananas, mashed
1/2 cup plain yogurt (non-fat or whole milk)
1 egg
1/4 cup brown sugar
1/4 cup canola oil
1 1/4 cups whole wheat flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/4 teaspoon salt
Optional toppings: old-fashioned oats, seeds, coconut, pepitas, or chopped nuts
Instructions
Heat oven to 375 degrees. Line a 12-muffin tin with muffin liners. Mix bananas, yogurt, egg, sugar, and canola oil in a large bowl. Add whole wheat flour, baking powder, baking soda, cinnamon, and salt and mix. Spoon the mixture into the 12 muffin cups (they will be about 2/3rds full) and add optional toppings.
Bake for 20-23 minutes until a toothpick inserted into the muffin comes out clean.
