Cheat on Donuts with Questified Peanut Butter Candy Donuts

The only thing getting dunked around here is the myth that tasty treats can’t also crush your protein goals. Almond flour, Greek yogurt, and peanut butter just teamed up to create a donut so fluffy it practically levitates. Then we hit it with a sugar-free chocolate glaze and peanut butter candy bits that’ll make your taste buds do a double-take. Dunkers, please step aside. Donuts this good get savored, not soaked.

Yields: 14 servings | Serving Size: 1/2 donut

Calories: 130 | Protein: 5g | Fat: 10g | Net Carb: 3g

Total Carb: 10g | Sugar: <1g

Ingredients

Peanut Butter Donuts

  • 1 cup almond flour
  • 2 tbsp gluten-free flour
  • 2 tbsp zero-calorie sweetener
  • ½ scoop Quest Peanut Butter Protein Powder
  • ½ tsp baking powder
  • ¼ tsp baking soda
  • ⅛ tsp salt
  • ¼ cup almond milk
  • 2 tbsp natural peanut butter
  • 2 tbsp 0% Greek yogurt
  • 1 egg
  • 1 egg white
  • 1 tsp vanilla extract

Frosting:

Method

  1. Preheat the oven to 350 F and prepare a 2.5” donut mold pan with non-stick spray.
  2. In a bowl, stir together the flours, sweetener, protein, baking powder, baking soda, and salt.
  3. In another bowl, whisk together the almond milk, peanut butter, yogurt, egg, egg white, and vanilla until smooth.
  4. Add the dry ingredients to the wet and use a rubber spatula to combine.
  5. Transfer the batter to a piping bag and fill 7 donut cavities with an even amount of batter. Bake the donuts for 16-18 minutes. Let cool.
  6. Once cooled, melt the chocolate and butter together until smooth.
  7. Dip each donut into the chocolate and then top with crushed candies. Chill until the chocolate is solid.
