Welcome to my favorite daily detox vegetable soup recipe!

Hey there, beautiful souls! How’s your morning going? I hope it’s filled with joy and positivity. Today, I’m thrilled because the Pilot has a day off (!), and we’re planning a morning hike followed by a breakfast and coffee date. Of course, with the unpredictable nature of parenthood, if one of our kids ends up staying home sick, our plans might need a slight adjustment lol.

Even though Tucson is still basking in warm weather, I can officially declare that it’s soup season. Personally, I’m a fan of soup all year round. Whether it’s scorching hot outside or freezing cold, you’ll find me enjoying a piping hot bowl of soup. I adore soups, especially for lunch, because they’re easy to prepare in advance, loaded with nutrients, and highly customizable based on what ingredients you have on hand. Plus, you can easily amp up the protein content by adding an egg, shredded beef, or chicken.

Detox Vegetable Soup Recipe

I love preparing *detox soups* because they’re light, easy on the stomach, and align with the detox requirements I follow, like the Dr. Cabral detox guidelines. This particular recipe is incredibly easy, cooked in the Instant Pot, and perfect for meal prep or enjoying a nutritious and comforting meal.

Benefits of Detox Vegetable Soup

Packed with Nutrients:

Sweet potatoes, zucchini, and bell peppers provide essential vitamins A, C, and antioxidants to boost your immune system.

Rich in Fiber:

Beans such as garbanzo and kidney beans promote digestive health and aid in detoxification by enhancing gut function.

Hydration:

Veggie broth helps keep you hydrated, which is crucial for proper detoxification.

Supports Weight Loss:

Soups are typically low in calories but highly satisfying, helping to curb cravings and improve satiety.

Anti-inflammatory:

Herbs like thyme, rosemary, and oregano not only lend delightful flavors but also possess anti-inflammatory properties.

Meal Prep Tips

Batch Cooking:

This soup freezes exceptionally well! Prepare a large batch and store individual portions in the freezer for quick and convenient meals throughout the week. (I swear by these Souper Cubes!)

Topping Ideas:

Prep your toppings – avocado slices, fresh herbs, and lemon juice in advance and store them separately for easy assembly when serving.

Versatility:

Feel free to swap out beans for your preferred legumes or incorporate other veggies like spinach or green beans based on what you have available.

Ingredients for Detox Vegetable Soup

Vegetables:

1 sweet potato, peeled and diced

2 zucchini, chopped

1 bell pepper, diced

1 onion, chopped

2 cloves garlic, minced

1 bag of broccoli florets, washed

2 carrots, peeled and chopped

Beans:

1 can garbanzo beans (drained and rinsed)

1 can kidney beans (drained and rinsed)

Broth and Seasoning:

4 cups vegetable broth

1 tsp thyme

1 tsp rosemary

1 tsp oregano

2 bay leaves

Salt and pepper to taste

Optional Toppings:

Avocado slices

Fresh herbs (parsley, cilantro, etc.)

Freshly squeezed lemon juice

Steps to Make Detox Vegetable Soup

Step 1: Prep the Veggies

Peel and chop the sweet potato, zucchini, bell pepper, onion, and garlic.

Step 2: Add to Instant Pot and Sauté

Add all the chopped vegetables to the Instant Pot and saute them for 3-5 minutes in a bit of avocado oil. Season generously with salt and pepper. Add the beans, seasonings, and vegetable broth to the Instant Pot.

Step 3: Set the Instant Pot

Program the Instant Pot to the “Soup” setting for 30 minutes.

Step 4: Natural Release

Allow the Instant Pot to release pressure naturally for 10-15 minutes, then perform a quick release.

Step 5: Serve and Garnish

Ladle the soup into bowls and top it off with avocado, fresh herbs, and a splash of lemon juice.
