The Ultimate Cheat Dessert: Questified Chocolate Macadamia Pie

Ingredients

Crust:

Filling:

  • 1 can coconut milk, canned
  • 1 tbsp gelatin
  • 1 scoop Quest Chocolate Milkshake Protein Powder
  • 1 cup sugar-free chocolate chips
  • 1 tsp vanilla extract
  • Pinch of sea salt
  • 2 tbsp chopped macadamia nuts, for topping
  • 2 tbsp toasted coconut, for topping

Method

  1. Preheat the oven to 350°F and prepare a 9-inch pie dish with non-stick spray. Break the Quest cookies into small pieces and bake until golden brown. Let cool.
  2. Blend the cooled cookies into fine crumbs, then mix with melted butter. Press the mixture into the pie dish and bake until golden. Let cool.
  3. In a pot, whisk coconut cream and gelatin, bringing to a boil. Remove from heat, add protein powder, then pour over chocolate chips. Stir until smooth, then mix in vanilla and salt. Pour into the crust and chill.
  4. Top with macadamia nuts and toasted coconut before slicing and serving.
